Eating a vegan diet doesn't have to be difficult, especially if you're short on time! In this post, we'll show you twelve easy vegan snacks that can be made in minutes. From healthy dips and chips to sweet treats, you'll find something for every mood.

1) Dates.

Dates are nature's candy! But since they're slightly bitter, you can improve their taste by dipping them in unsweetened cocoa powder. We found the original recipe here but made a couple of adjustments, so for this one, all you have to do is blend four large pitted dates with two tablespoons of water. Coat the dates in unsweetened cocoa powder until they're evenly dark. You can use coconut flakes as a variation for this recipe.

We used the same ingredients as in the original recipe but made a couple of swaps because we didn't have any cashews on hand. If you decide to give it a try, let us know what you think of it! We add a little bit of lemon juice and add about half a cup of dates, making the consistency perfect to shape balls from.

Then bake them in the oven until they're crispy. Use muffin tins for this recipe because you'll need to keep the slices from sliding all over the place. Add as much flavor as you want with herbs, spices, or your favorite dipping sauce!

If you're craving something crunchy but don't want to buy chips or other unhealthy snack foods, try this simple recipe: roast 1.5 cups of dry chickpeas and sprinkle them with salt and your favorite spices. This is a great vegan snack for movie nights!

Blend two bananas, for this recipe, we also added two tablespoons of peanut butter, four tablespoons of soy milk, cinnamon to taste, and some syrup or honey if desired. Make sure the mixture is thick enough to spread over a pan. Cook it on both sides until you see bubbles forming. This recipe makes eight pancakes, perfect for eating as a snack or even for breakfast!

These are another one of our favorite snacks! You can buy rice paper rolls in most health food stores. Just fill them with your preferred ingredients and eat them as is. If you want to make the recipe below, you'll need some veggies (we used carrots, cucumber, lettuce and bell peppers), one tablespoon of peanut butter or other nut butter, two tablespoons of soy sauce or tamari and one tablespoon of hot chili sauce.

Simply put all ingredients in a blender (or food processor) until it becomes creamy. Then take rice paper sheets and spread the mixture on them. Some people like to add some rice noodles too!
